I’m sure I’ve said it before, but granola is one of my all time favorite things to make and eat. It’s definitely on my list of comfort foods as the process is usually just as reliable as the result is delicious.
This recipe turns out a result that is crispy, crunchy, and addicting as usual. It’s particularly good topped with strawberries and almond milk.
2 cups rolled oats
1/2 cup seed mix (I used Go Raw brand’s simple seed mix; sunflower & pumpkin seeds)
1/2 cup cocoa powder
1 tbs cinnamon
1/2 tsp sea salt
2 tbs coconut oil
2 tbs sunflower seed butter
2 tbs honey
1 tbs maple syrup
1 tsp vanilla extract
1/ Preheat oven to 350 F. In a bowl, whisk together oats, seeds, cocoa powder, cinnamon, and salt until oats are evenly dusted. Set aside.
2/ In a saucepan or microwave safe cup, melt coconut oil, sunflower seed butter, honey and maple syrup together until all liquefied. Whisk to combine and add in vanilla extract. Pour over oat & seed mix and stire until everything is evenly coated.
3/ Dump mixture out on a parchment lined baking sheet and spread into an even layer. Bake at 350F for 20-25 minutes, stirring every 5-10 minutes or so. When done, the granola should feel dry to the touch. Cool completely and store in a glass container to best keep the granola crisp.
